It was hard work for our great-grandmothers to prepare the screw-shaped noodles, the most important ingredient of Sunday soups, and one of the most popular noodle type of their age. The twisted soup noodle is as popular as ever, but less and less people are willing to do the lengthy and complicated work it requires. There is only one noodle type on the market in Hungary which is produced by an industrial technology based on modelling the technique of manual noodle making (the pasta dough is not pressed through a shape but the noodles are twisted from rolled pasta dough), the automated machine producing rolled screw-shaped noodle (gooseneck). The quality of the screw-shaped noodle produced by the pasta machine surpasses by far the quality (both shape and flavours) of the screw-shaped noodle types made by the pressing technology.
